🔅 پنی‌سیلیوم یکی از شناخته‌شده‌ترین جنس‌های قارچی است که گونه‌های زیادی از آن تاکنون شناسایی شده‌است. این قارچ در همه جا از جمله خاک، هوا و مواد غذایی وجود دارد.
🔅 نام پنی‌سیلیوم از کلمه‌ی Penicillus به‌معنای برس‌مانند گرفته شده‌است که به ظاهر این قارچ در زیر میکروسکوپ اشاره دارد.
🔅 این قارچ تاثیرات قابل توجهی در زندگی انسان‌ها از نظر اقتصادی، زیست‌محیطی و پزشکی دارد. به‌طوری‌که تولید انواع مختلف مواد غذایی، اسیدهای آلی و آنتی‌بیوتیک توسط این قارچ، بسیار مورد توجه قرار گرفته‌است.
🔅 علاوه‌براین، توانایی این قارچ در تولید مایکوتوکسین، می‌تواند باعث پوسیدگی مواد غذایی و آلودگی آن‌ها شود. در نتیجه مصرف این محصولات آلوده، منجربه انواع آلرژی و بیماری‌های قارچی برای انسان‌ها می‌شود.
🔅مهم‌ترین گونه‌های این قارچ شامل:
• Penicillium camemberti 📍این قارچ به‌عنوان تولیدکننده پنیر شناخته می‌شود.
• Penicillium chrysogenum 📍این قارچ که در گذشته P.notatum نام داشت، به‌عنوان تولیدکننده‌ی آنتی‌بیوتیک پنی‌سیلین شناخته می‌شود.
